Try the 'undelete' plugin for JOSM. It doesn't always work, e.g. when a way was meanwile edited but sometimes it's the fastest to get back the old version.

Yes. I must have mixed up landcover=grass vs landuse=grass. Since the landuse wiki page even has a photo of a roundabout it should also apply landuse=grass. I'm adding it now
