Yes, I ride horses. Unfortunately, the riding centres are not rendered on many OSM maps because the tag has been used incorrectly too often (https://github.com/gravitystorm/openstreetmap-carto/pull/3660). That's why I occasionally complain when someone uses the tag incorrectly.
There are various tagging options for paddocks. In Germany paddocks are mostly smaller snd grassless. In this case meadow=paddock is not really suitable, which is why (a long time ago) someone invented landuse=animal_keeping. See also osm.wiki/Riding

The tag leisure=horse_riding is for complete riding centres and not for arenas or other things that may belong to a riding centre. See osm.wiki/How_to_map_a#Riding_centre_(equestrian) and example way/291296002#map=17/45.382300/7.745034&layers=P . A node is also ok, example node/5896012696#map=19/45.319560/7.934745&layers=P . Arenas should be tagged with leisure=pitch + sport=equestrian. In JOSM you use the preset for sport=equestrian.

I have a question about way/1422354662: This seems to be a camp site specifically for horseback riders (https://www.nps.gov/yose/planyourvisit/tmhorsecamp.htm : "Tuolumne Horse Campsites accommodate only those with horses or other stock animals...") but it is tagged as a normal camp site. We have a tag for places where horseback riders can temporarily stay overnight with their horses: tourism=trail_riding_station . I wonder why this is not used for such horse camps, not only in this case, but apparently in many others as well. Was there a discussion about this? Or is it because Carto doesn't render this tag?
