I had the same problem, seems like StreetComplete is not the proper tag to rename POIs, it thinks the shop is changed and deletes other tags.

take a look on version #3, the changeset in which you renamed the POI is the same that deleted "opening_hours:signed=no"

Because if you rename a place in StreetComplete the editor thinks the shop is changed and deletes other tags as well.

qua hai cancellato PAM rimuovendo anche i dati dell'indirizzo di Corso Potenza 60 che ora non risulta piu' presente del database come nodo. Lo ripristino.

così hai eliminato anche i dati relativi al civico però, che ora non risulta piu' presente nel database. Dovevi cancellare solo amenity=bank
e lasciare almeno i tag addr:street e addr:housenumber
