I feel like that's an oversimplification. Like, shop=sports :

It's a qualifier tag that specifies what sport is associated with a feature. If it's a feature like leisure=pitch where sports are played, then that sport is played there. You usually don't play sports at a shop=sports but you can use sport=* on a shop=sports to say which sports equipment you can buy there. Similar to cuisine=*, which is usually used on amenity=restaurant/fast_food, but can also be used on shop=supermarket, even though you don't always eat food at a supermarket.

I don't think this is a good idea. natural=wood should be for forests, not canopy cover.

Oh, I got it backwards, you just removed the sport= tag. I don't really know if that tag means you can play a sport at a place—it's used to specify which sports a sports store covers, for example.

Is it? When I surveyed it in person it looked like a place where you'd buy pool tables, and that's reflected in the name, and on a website that seems to be them.

You can tag a street that has a different name on both sides with name:left=* and name:right=* name:left=*

Also, the roads still have "access=private" on them, so software will assume that the roads aren't passable, even though the gates are.

OSM tags are case-sensitive: "access=Yes" is different from "access=yes". "Yes" with a capital Y won't work in most software.

Be careful when changing raw tags! Removing the "highway" key makes it unusable by any software.

If so, the abbreviation should be expanded and the title capitalized, see osm.wiki/Names#Good_practice . If it's just a soccer field that's maintained by the middle school, you can add the name of the school in the operator= tag on the field.
