I don't know of any map that renders amenity=hitching_post or amenity=animal_hitch. This will certainly not happen with the maps offered on osm.org until thousands of such things have been mapped. So far there are only a few hundred. Even leisure=horse_riding, of which 19k have been mapped, is only rendered on a few maps so far, see osm.wiki/Talk:Tag:leisure=horse_riding#Rendering. To see the horse highlines on a map, you could add another tag, which will be rendered. But to do that would be against OSM conventions, see osm.wiki/Tagging_for_the_renderer. Or make your own map using the OSM data.

These tags are also not in the presets of the editors. For iD you can open a request like https://github.com/openstreetmap/id-tagging-schema/issues/233. For JOSM you can add a preset in https://josm.openstreetmap.de/wiki/Presets/NewTags yourself.

If you don't object, I will retag the horse highlines. Do you think that horse highlines can be called hitching posts? If not I will will retag them to amenity=animal_pitch + animal_pitch=xxx; should xxx be "highline" or "high_line"? There are also "picket lines" (two words), see https://en.wikipedia.org/wiki/Picket_line. Can you upload a photo without copyright restrictions of such a horse highline on wikimedia commons or in the OSM wiki for the documentation in the wiki? https://commons.wikimedia.org/wiki/File:Highline.jpg is not suitable because it shows a temporary highline which therefore should not be mapped in OSM.

you did not add an equestrian area but you retagged a building to an equestrian centre (leisure=horse_riding) and this is wrong because
1. you removed the building=* tag and the building is no longer rendered as a building
2. the equestrian centre is larger than the building, the area should cover the entire site of the equestrian centre, like here: way/1039425581 (or map a node for it).

Hi, if way/1363324313 is a riding arena, it should be labelled leisure=pitch + sport=equestrian (like way/344275187), but I'm not sure if it is; it looks different on different satellite views.

Riding centres and riding arenas are often confused. I correct some from time to time; e.g. way/290761941 just now. The mistaggings have led to riding centres not being rendered on OSM Carto so far, see https://github.com/gravitystorm/openstreetmap-carto/pull/3660#issuecomment-462927711

What is a "Horse HIghline"? Are you sure it is a horseback riding center? You have tagged this node as a horseback riding center (leisure=horse_riding). A horseback riding center usually has some extension and can be seen on Bing or so, but there seems to be just forest where this node is.

Therefore it is not rendered as a building. If this object is an indoor riding arena you can tag it building=riding_hall instead of leisure=horse_riding (like here: way/924645249#map=17/57.788909/14.111676&layers=P )
